BBQ Pineapple and Pepperjack Flatbread

Ingredients
- 1 large tomato sliced thinly
- 1 large green pepper sliced thinly
- 1 medium gred onion sliced thinly
- 2 slices flat bread
- 1 small can of sliced pinapple
- 4 tbsp bbq sauce
- 2 tbsp butter
- 1 tsp olive oil for roasting vegetables
- 1/4 cup pepper jack cheese shredded
Directions
1. In a preheated oven, roast the tomato, green pepper, and onion with a drizzle of olive oil and a pinch of salt and pepper (roast for 10-12 minutes)
2. While the vegetables are roasting, mix the garlic and butter and brush on the top of the flat bread.
3. Using the same bowl as the garlic and butter, mix the BBQ sauce and 2 tbsp of pineapple juice drained from the sliced pineapples.
4. Warm in the microwave for around 15 seconds.
5. Once the vegetables are done, place them in a bowl. Carefully wipe off the baking sheet (will be hot).
6. Place the flatbread on a baking sheet and top with vegetables. Sprinkle with pepper jack cheese and pineapple.
7. Return the baking sheet to the oven to toast the flatbread (8-10 minutes).
8. Once toasted, remove from the oven and move to a plate.
9. Drizzle flatbread with BBQ sauce and serve.
