Pork Chops in Creamy Dion Mushoom Sauce

Ingredients
- 3 whole button mushrooms thinly sliced
- 1 whole yellow onion thinly sliced
- 1 clove garlic finely chopped
- 2 whole pork chops
- 1/4 cup chicken stock
- 1 tbsp sour cream
- 1 tbsp dijon mustard
Directions
1. Pat dry the pork chop with paper towels and season all over with salt and pepper.
2. Heat a drizzle of oil in a large skillet over medium heat.
3. Cook pork chops until browned and fully cooked ( 4-5 minutes per side).
4. Remove from heat and set aside to rest. Using the same pan, heat a drizzle of oil over medium heat and cook the mushrooms until browned and softened, continuously stirring so they do not burn (5-7 minutes).
5. Add sliced onions, chopped garlic, and continue to cook until softened.
6. Add 1/4 cup chicken stock and simmer until slightly thickened.
7. Remove pan from heat and add sour cream, mustard and 1 tbsp of butter. Mix well.
8. Plate pork chops and spoon mushroom sauce over. Serve with roasted potatoes
