Ingredients
- 2 lbs stew beef cut into bite size pieces
- 3 tbsp olive oil
- 1 large onion chopped
- 3 cloves garlic minced
- 4 large potatoes peeled and cubed
- 4 large carrots sliced
- 1 cup peas fresh or frozen
- 4 cups beef broth
- 2 tbsp tomato paste
- 2 tbsp flour
- 1 tsp salt adjust to tsate
- 1/2 tsp black pepper adjust to taste
- 1 tsp dried thyme
- 1 whole bay leaf
Directions
1. Heat olive oil in a large pot or Dutch oven over medium heat.
2. Add the beef and brown on all sides. Remove beef and set aside.
3. In the same pot, add onion and cook until softened, about 5 minutes.
4. Stir in garlic and cook for 30 seconds.
5. Sprinkle flour over the onions and stir well. Add tomato paste and mix.
6. Slowly pour in beef broth, stirring to avoid lumps.
7. Return beef to the pot. Add salt, pepper, thyme, and bay leaf.
8. Bring to a gentle boil, then reduce heat, cover, and simmer for 1 hour.
9. Add potatoes and carrots. Simmer uncovered for another 30 minutes, until tender.
10. Stir in peas and cook for 5 more minutes. Remove bay leaf before serving.
