Garlic Rosemary Chicken

Ingredients
- 10/20 oz chicken breast
- 1 clove garlic
- 1/4 cup red onion chopped
- 1 sprig rosemary leaves finely chopped
- 1 TBSP butter
- 1 TBSP flour
- 1 Pinch Salt & Pepper
Directions
1. Pat Dry chicken with paper towels, season with salt and pepper. Sprinkle with 1 TBSP of flour.
2. Heat a large drizzle of oil in a large pan over medium-high heat.
3. Add chicken and cook until browned (5-6 minutes per side).
4. Remove chicken to the cutting board and let rest. In the same pan, heat a drizzle of oil and add chopped onions, garlic, and rosemary with salt and pepper. Cook until softened (2 to 3 minutes).
5. Add 1/4 cup chicken stock and simmer until thickened (2 to 3 minutes).
6. Remove from heat and add 1 TBSP of butter, mix until melted.
7. Thinly slice chicken and top with sauce. Serve with roasted carrots and sweet potatoes.
