Ingredients
- 3 lbs potatoes peeled and cubed
- 1 cup mayonnaise
- 2 tbsp yellow mustard
- 1/2 cup celery finely chopped
- 1/2 cup red onion finely chopped
- 1 whole hard boiled eggs chopped
- 1/4 tsp salt adjust to taste
- 1/4 tsp black pepper adjust to taste
- 1 tsp paprika for garnish
Directions
1. Place potatoes in a large pot and cover with cold, salted water. Bring to a boil and cook until fork-tender, about 12–15 minutes.
2. Drain potatoes and allow them to cool slightly.
3. In a large bowl, whisk together mayonnaise, and mustard until smooth.
4. Add the warm potatoes to the dressing and gently toss to coat.
5. Fold in celery, onion, and chopped hard-boiled eggs.
6. Season with salt and black pepper to taste.
7. Cover and refrigerate for at least 1 hour to allow flavors to develop.
8. Before serving, sprinkle with paprika if desired.
