Ingredients
- 1 1/2 cup graham cracker crumbs for crust
- 1/4 cup sugar for crust
- 1/2 cup melted butter for crust
- 3 8 oz packages softened cream cheese for filling
- 1 cup sugar for filling
- 3 large eggs for filling
- 1 cup sour cream for filling
- 1 tsp vanilla extract for filling
Directions
1. Preheat oven to 325°F. Grease a 9-inch springform pan.
2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of the pan to form the crust.
3. In a large bowl, beat cream cheese until smooth and creamy with no lumps.
4. Add sugar and vanilla extract, mixing until well combined.
5. Beat in eggs one at a time, mixing on low speed just until incorporated.
6. Gently fold in the sour cream until smooth.
7. Pour the filling over the prepared crust and smooth the top.
8. Bake for 50–60 minutes, or until the center is almost set but slightly jiggly.
9. Turn off the oven, crack the door open, and allow the cheesecake to cool in the oven for 1 hour.
10. Remove from oven and refrigerate for at least 4 hours or overnight before serving.
