Ingredients
- 1 lb carrots coarsely chopped
- 1/2 cup butter
- 1 lb carrots coarsely chopped
- 1/2 cup butter
- 1 tsp vanilla extract
- 3 whole eggs
- 3 tbsp all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 3/4 cup white sugar
Directions
1. Preheat oven to 350°F
2. Lightly grease a 2-quart casserole dish.
3. Bring a large pot of salted water to a boil.
4. Add carrots and cook until tender, 15 - 20 minutes.
5. Drain and mash.
6. Stir butter, vanilla extract, and eggs until well combined.
7. Stir together flour, baking powder, salt, and sugar.
8. Mix the dry ingredients into the carrot mixture and blend until smooth.
9. Transfer to casserole dish and bake for 45 minutes.
