Ingredients
- 6 oz white chocolate chopped
- 2 tbsp unsalted butter
- 2 cups heavy whipping cream divided in half
- 1 tsp vanilla extract
- 1 pinch salt
Directions
1. In a heatproof bowl, melt white chocolate and butter over a double boiler or in the microwave in short intervals, stirring until smooth.
2. Remove from heat and let cool slightly.
3. In a small saucepan, heat ½ cup of heavy cream until just warm (do not boil).
4. Slowly whisk the warm cream into the melted chocolate until smooth and combined.
5. Stir in vanilla extract and a pinch of salt. Let the mixture cool to room temperature.
6. In a large bowl, whip the remaining 1 ½ cups of heavy cream until soft peaks form.
7. Gently fold the whipped cream into the cooled chocolate mixture until no streaks remain.
8. Spoon mousse into serving cups or glasses.
9. Refrigerate for at least 2 hours, or until set.
10. Serve chilled, optionally topped with whipped cream, berries, or shaved white chocolate.
