Garlic Basil Chicken with Tomatoes

Ingredients
- 2 tbsp balsamic vinegar
- 3 tbsp extra virgin olive oil
- 1/4 tsp salt adjust to taste
- 1/4 tsp cracked black pepper adjust to taste
- 2 whole boneless chicken breast
- 2 cups cherry tomatoes halved
- 2 whole cloves of garlic
- 2 tbsp olive oil
- 2 tbsp balsamic glaze
- 1 handful fresh basil torn
Directions
1. Heat the olive oil in a large skillet over medium heat.
2. Season chicken lightly with salt and pepper (optional, not counted in 5 ingredients). Add to the pan and cook until golden on both sides, about 6–7 minutes per side (depending on thickness).
3. Add the garlic to the pan and cook 1 minute, until fragrant.
4. Toss in the tomatoes and cook until they soften and release juices, about 4–5 minutes.
5. Add balsamic glaze and coat cooking for an additional minute.
5. Remove from heat, scatter fresh basil over the top, and serve immediately.
