Peach, Tomato & Cucumber Salad

Ingredients

• 2 medium ripe peaches cut into wedges
• 2 medium ripe peaches cut into wedges
• 2 medium tomatoes cut into wedges
• 1 medium cucumber thinly sliced
• 1/2 small red onion thinly sliced
• 1 handful fresh basil leaves torn
• 1/2 cup parmesan cheese shaved
• 2 tsp honey

Directions

1. In a small bowl, whisk together honey, balsamic vinegar, olive oil, salt, and pepper until smooth. Taste and adjust seasoning.
2. In a large salad bowl or platter, gently arrange peaches, tomatoes, cucumber, and red onion.
3. Scatter the cheese of choice over the top.
4. Tear basil leaves and sprinkle generously over the salad.
5. Drizzle the honey-balsamic vinaigrette evenly over everything.
6. Finish with an extra crack of black pepper and a drizzle of olive oil if desired.
