1. Prepare broccoli: Wash and chop broccoli into small florets. Set aside.
2. Sauté aromatics: In a large pot, melt butter over medium heat. Add onion and garlic, sauté until onion is soft and translucent (about 3–5 minutes).
3. Make the roux: Sprinkle the flour over the onions and garlic, stirring constantly for 1–2 minutes until slightly golden. This will thicken the soup.
4. Add liquid: Slowly whisk in the broth and milk, making sure there are no lumps. Bring to a gentle simmer.
5. Cook broccoli: Add the broccoli florets to the pot. Simmer for 10–15 minutes, until broccoli is tender.
6. Blend (optional): For a smoother soup, use an immersion blender to partially or fully puree the soup. Leave some broccoli chunks for texture if desired.
7. Add cheese: Reduce the heat to low and stir in shredded cheddar cheese until fully melted and smooth.
8. Season: Add salt and pepper to taste and adjust seasonings as needed.
9. Serve: Ladle the soup into bowls. Optionally, garnish with extra cheddar or croutons. Serve warm.
